Soup recipes from Holiday party

Finally posting the recipes for the party soups:

Indonesian Squash & Spinach Soup   serves 6

1 tsp coriander seeds     1 tsp cumin seeds
1 tsp turmeric                2 small chiles
15 blanched almonds

1 large onion, diced      2 garlic cloves, minced
3 tbsp veggie oil       2 tsp grated peeled fresh ginger root
1 tsp salt                   2 cups veggie stock  (I made my own)
14 oz. can of coconut milk                                                                                                                                         6 handfuls chopped, fresh spinach
4 cups peeled & cubed butternut squash    fresh lemon juice

Easy spice grinding: spices, nuts, chiles  in blender
In ½ cup of water.  

In soup pot, sauté onion & garlic in the oil. Add ginger & salt, sauté
Till onions are translucent, add stock and spice mixture and simmer
For 5 minutes.    Stir in coconut milk and squash and simmer uncovered for
40 minutes, take off heat, stir in spinach and lemon juice to taste.

 


Mushroom Soup  (serves 6)

2 large onions, minced             2 large cloves garlic, minced
2 ½ cups chicken stock            1 lb. fresh mushrooms, cleaned and sliced
                                                (food processor slice blade makes it easy)
½ cup dry white wine              5 tbs butter   1 tsp oil
2 tbs sour cream                       ½ cup ½ and ½
½ tsp tarragon (or more)          1 bay leaf
1 tsp corn starch                       chopped parsley or chives     salt & pepper

Saute onions and garlic till golden in 2 tbs butter and the oil, remove from soup
pot and reserve.  Add rest of butter and mushrooms, sauté 2 or 3 minutes. Return
garlic and onions to pot, add salt and pepper, tarragon, bay leaf. Blend corn starch and wine.
Add to the stock, pour the whole into onion mixture in the pot. Simmer 15 minutes.
Add ½ and ½ , sour cream and bring ONLY to a simmer. Pour into cups or bowls,
Sprinkle with parsley or chives, and serve.
